Pan-Seared Steak with Garlic Herb Butter
Pan-seared grass-fed steak basted in a fragrant garlic and rosemary ghee, served with crisp-tender asparagus for a savory and satisfying dinner.
INGREDIENTS
6 oz Grass-fed top sirloin steak
1 tbsp Ghee
2 large Garlic cloves
1 sprig Fresh rosemary
0.25 tsp Sea salt
0.25 tsp Black pepper
12 medium Asparagus spears
1 tsp Lemon juice
PREPARATION
Pat the steak dry with paper towels and season both sides with sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat until it begins to smoke slightly.
Add half of the ghee to the pan, then sear the steak for 3 to 4 minutes per side for medium-rare.
During the last 2 minutes of cooking, add the remaining ghee, smashed garlic cloves, and rosemary sprig to the pan.
Tilt the pan and spoon the melted herb ghee over the steak repeatedly to baste the meat.
Remove the steak to a plate and let it rest for 5 minutes before slicing.
In the same skillet, sauté the asparagus for 3 to 5 minutes until bright green and tender.
Squeeze lemon juice over the asparagus and serve immediately alongside the sliced steak.
