Peel and dice the sweet potato into small cubes, then steam or boil until tender, approximately 12-15 minutes.
Drain the sweet potatoes and mash them until smooth, adding a pinch of sea salt if desired.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Pat the salmon fillet completely dry with a paper towel and season with salt and pepper.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 3 minutes or until desired doneness is reached.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the remaining teaspoon of olive oil and the minced garlic, sautéing for 30 seconds until fragrant.
Add the fresh spinach to the skillet and toss until just wilted, then finish with a squeeze of fresh lemon juice.
Plate the sweet potato mash, top with the garlic spinach, and place the seared salmon on top.
