Pan-Seared Salmon Power Bowl
Pan-seared chicken and wild-caught salmon tossed with crisp red onions and earthy Malabar spinach, served with a side of chilled strawberries for a refreshing finish.
INGREDIENTS
7 oz Chicken breast
1.5 oz Salmon
1 cup Malabar spinach
0.25 cup Red onion
0.2 cup Cooked white rice
0.2 cup Frozen strawberries
0.5 tsp Sea salt
0.25 tsp Black pepper
1 tsp Lemon juice
2 tbsp Water
PREPARATION
Dice the chicken breast and salmon into bite-sized pieces and season both with sea salt and black pepper.
Heat a large non-stick skillet over medium-high heat and add the chicken, searing for 4-5 minutes until golden and nearly cooked through.
Add the salmon pieces and sliced red onion to the skillet, sautéing for another 2-3 minutes until the salmon is opaque and the onion is tender.
Toss in the Malabar spinach and water, then cover the pan for 1 minute to allow the greens to steam and wilt.
Remove the lid and stir in the cooked white rice and lemon juice, heating everything together for 1 minute until well combined.
Transfer the mixture to a bowl and serve with the frozen strawberries on the side as a chilled, sweet accompaniment.
