Balsamic Glazed Brussels Sprouts with Roasted Chicken
Pan-seared chicken breast paired with crispy roasted Brussels sprouts and red onion, finished with a velvety balsamic glaze.
INGREDIENTS
5.5 oz Chicken breast
1.5 cup Brussels sprouts
0.25 cup Red onion
1 tbsp Olive oil
2 tbsp Balsamic vinegar
1 tsp Honey
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
PREPARATION
Preheat your oven to 400°F and line a large baking sheet with parchment paper.
Trim the ends off the Brussels sprouts and slice them in half vertically.
Toss the sprouts and diced red onion with half of the olive oil, sea salt, and black pepper directly on the baking sheet.
Roast for 20-25 minutes, tossing halfway through, until the edges are beautifully charred and tender.
Season the chicken breast with garlic powder and the remaining salt and pepper.
Heat the rest of the olive oil in a skillet over medium heat and cook the chicken for 6 minutes per side until the internal temperature reaches 165°F.
In a small saucepan, whisk the balsamic vinegar and honey over low heat for 4 minutes until the liquid reduces into a thick glaze.
Slice the chicken into strips and serve alongside the roasted vegetables, drizzling the warm balsamic glaze over the entire plate.
