Heat a cast-iron skillet over medium-high heat with the remaining olive oil and sear the steak for 3 to 4 minutes per side for medium-rare.
Transfer the steak to a cutting board and let it rest for 5 minutes before slicing it thinly against the grain.
While the steak rests, toast the sourdough slice and fry the eggs in the same skillet until the whites are fully set but the yolks remain runny.
Arrange the arugula on a plate, top with the toasted sourdough, sliced steak, roasted vegetables, and the eggs.
