Heat the extra virgin olive oil in a medium non-stick skillet over medium-high heat.
Add the ground turkey to the skillet, breaking it into small crumbles with a spatula, and cook until browned and no longer pink.
Add the diced yellow onion and bell peppers to the skillet, sautéing for about 4-5 minutes until the vegetables are tender and slightly caramelized.
Stir in the sea salt, black pepper, garlic powder, and smoked paprika until the turkey and vegetables are evenly coated.
Add the fresh baby spinach to the pan and stir for 1 minute until the leaves are just wilted.
Using the back of a spoon, create two small wells in the turkey and vegetable mixture.
Carefully crack one egg into each well.
Reduce the heat to medium, cover the skillet with a tight-fitting lid, and cook for 2-3 minutes until the egg whites are fully set but the yolks are still soft.
Remove from heat and serve the skillet hot.
