Sautéed chicken breast and crisp vegetables tossed in a zesty ginger-garlic sauce, served over fluffy brown rice for a vibrant and savory meal.
INGREDIENTS
5 oz Chicken breast
0.5 cup Cooked brown rice
0.5 tbsp Avocado oil
1 tsp Toasted sesame oil
1 cup Broccoli florets
0.5 cup Red bell pepper
1 tbsp Fresh ginger
2 clove Garlic
2 tbsp Coconut aminos
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Slice the chicken breast into bite-sized pieces and season with sea salt and black pepper.
Finely mince the garlic and grate the fresh ginger.
Heat the avocado oil in a large skillet or wok over medium-high heat until shimmering.
Add the chicken to the skillet and sear until golden brown and cooked through, about 5-6 minutes.
Remove the chicken from the pan and set aside.
In the same pan, add the broccoli florets and sliced red bell pepper, sautéing for 3-4 minutes until tender-crisp.
Stir in the minced garlic and grated ginger, cooking for 1 minute until fragrant.
Return the chicken to the pan and pour in the coconut aminos and toasted sesame oil.
Toss everything together for 1-2 minutes until the sauce coats the ingredients evenly.
Serve the stir-fry immediately over the warm, fluffy brown rice.
