Chicken Karahi with Ginger and Chilies
Sautéed chicken breast simmered in a vibrant tomato-ginger reduction, finished with fresh green chilies for a bright, aromatic heat.
INGREDIENTS
6 oz chicken breast
1 tbsp ghee
2 medium tomatoes
1 tbsp fresh ginger
2 cloves garlic
2 whole green chilies
0.5 tsp ground turmeric
1 tsp ground cumin
1 tsp ground coriander
0.5 tsp sea salt
0.25 tsp black pepper
0.25 cup fresh cilantro
PREPARATION
Cut the chicken breast into 1-inch cubes and finely mince the garlic and ginger.
Heat the ghee in a large wok or heavy-bottomed pan over medium-high heat.
Add the chicken cubes to the pan and sear until they are golden brown on all sides.
Stir in the minced garlic and ginger, cooking for 1 minute until fragrant.
Add the chopped tomatoes, turmeric, cumin, coriander, salt, and pepper to the pan.
Cover and simmer for 8-10 minutes until the tomatoes break down into a thick, jammy sauce.
Slice the green chilies lengthwise and stir them into the chicken along with half the cilantro.
Cook uncovered for another 2 minutes to thicken the sauce further and garnish with the remaining cilantro.
