Seared Salmon Fillet with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet served with garlic-sautéed green beans and a side of velvety mashed sweet potato.
INGREDIENTS
8 oz Wild Salmon Fillet
120g Sweet Potato
100g Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water until fork-tender.
Drain the sweet potato and mash thoroughly until smooth, adding a pinch of sea salt if desired.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then place it in the skillet skin-side down.
Sear the salmon for 4-5 minutes until the skin is crispy, then flip and cook for another 3-4 minutes until cooked through.
In a separate pan, heat the remaining olive oil and sauté the green beans with minced garlic for 5 minutes until tender-crisp.
Plate the seared salmon alongside the sweet potato mash and garlic green beans, serving with a fresh lemon wedge if available.
