PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Slice the zucchini into half-moons and chop the red bell pepper into bite-sized pieces.
Place the zucchini, bell pepper, and halved cherry tomatoes on the baking sheet; toss with 0.25 tsp of olive oil, dried oregano, and a pinch of salt and pepper.
Roast the vegetables for 15-18 minutes until they are tender and show slight golden-brown charred edges.
