6 oz Top sirloin steak
1 medium Yukon gold potato
0.5 tbsp Extra virgin olive oil
1 clove Garlic
1 sprig Fresh rosemary
0.25 tsp Sea salt
0.25 tsp Black pepper
1 cup Green beans
PREPARATION
Preheat your oven to 400°F (200°C).
Dice the Yukon gold potato into half-inch cubes and toss them with half of the olive oil, sea salt, and black pepper.
Spread the potatoes on a parchment-lined baking sheet and roast for 20-25 minutes until they are golden and crispy.
While potatoes roast, season the sirloin steak on both sides with the remaining salt and pepper.
Heat a cast-iron skillet over medium-high heat with the remaining olive oil.
Place the steak in the hot skillet and sear for 3-4 minutes per side for medium-rare, adding the smashed garlic clove and rosemary sprig to the pan during the last 2 minutes of cooking to baste the meat.
Steam the green beans for 4-5 minutes until they are bright green and tender-crisp.
Remove the steak from the pan and let it rest for 5 minutes before slicing and serving alongside the roasted potatoes and green beans.
