Return the turkey to the pan and pour in the coconut aminos, rice vinegar, and sriracha.
Toss all ingredients together for 2 minutes until the sauce reduces into a glossy glaze that coats the turkey and eggplant.
Garnish with thinly sliced green onions and serve immediately.
