Garlic-Herb Green Beans with Fried Eggs
Sautéed green beans and garlic topped with velvety fried eggs and a sprinkle of feta cheese for a clean, protein-packed meal.
INGREDIENTS
4 large eggs
0.5 cup liquid egg whites
2 cup green beans
1 tbsp nutritional yeast
0.5 oz feta cheese
1 tsp extra virgin olive oil
2 tbsp water
2 clove garlic
1 tsp dried oregano
0.25 tsp sea salt
0.25 tsp black pepper
1 tbsp fresh parsley
PREPARATION
Trim the ends of the fresh green beans and finely mince the garlic cloves.
Heat 0.5 tsp of extra virgin olive oil in a large non-stick skillet over medium heat.
Add the green beans and water to the skillet, then cover with a lid to steam for 3 minutes until tender-crisp.
Remove the lid and add the minced garlic and nutritional yeast, sautéing for 2-3 minutes until the beans are lightly browned.
Season the beans with the dried oregano, sea salt, and black pepper, then transfer them to a serving plate and keep warm.
Wipe the skillet clean and add the remaining 0.5 tsp of olive oil over medium heat.
Pour the liquid egg whites into the skillet and immediately crack the whole eggs on top of the whites.
Cook undisturbed until the egg whites are fully opaque and set, but the yolks remain soft and runny.
Carefully slide the fried eggs over the green beans and garnish with crumbled feta cheese and chopped fresh parsley.
