Place the sweet potato wedges in the air fryer basket and cook for 15-18 minutes, shaking the basket halfway through until they are crispy and golden.
While the fries cook, grill or pan-sear the chicken breast over medium-high heat for 5-6 minutes per side until the internal temperature reaches 165°F.
In a small mixing bowl, whisk together the Greek yogurt, minced garlic clove, lemon juice, and the remaining 0.25 tbsp olive oil to create the aioli.
Slice the cooked chicken into strips and serve alongside the hot sweet potato fries with the chilled garlic aioli for dipping.
