Pan-seared chicken breast paired with velvety garlic-herb mashed potatoes whipped with Greek yogurt for a rich, savory finish.
INGREDIENTS
5 oz Chicken breast
1 medium Yukon Gold potato
0.25 cup Non-fat Greek yogurt
1 tsp Extra virgin olive oil
2 cloves Garlic
1 tbsp Fresh chives
1 tbsp Fresh parsley
0.25 tsp Sea salt
0.25 tsp Black pepper
2 tbsp Chicken bone broth
PREPARATION
Peel and cube the Yukon Gold potato into 1-inch pieces.
Place potatoes in a pot of cold water, bring to a boil, and cook for 12-15 minutes until fork-tender.
Season the chicken breast with half of the sea salt and black pepper.
Heat olive oil in a skillet over medium heat and cook chicken for 6-7 minutes per side until the internal temperature reaches 165°F.
While chicken rests, drain the potatoes and return them to the warm pot.
Add the minced garlic, Greek yogurt, chicken bone broth, chives, parsley, and remaining salt and pepper to the potatoes.
Mash the mixture until smooth and creamy, then serve the sliced chicken over the potatoes.
