Once the potato is done, slice it open lengthwise and fluff the interior with a fork.
Stuff the potato with the seasoned ground turkey and sprinkle the shredded cheddar cheese over the top while it is still hot to allow for slight melting.
Finish the dish with a generous dollop of nonfat Greek yogurt and a sprinkle of freshly chopped chives.
