Seared Salmon with Steamed Broccoli and Garlic Mashed Cauliflower
Pan-seared salmon fillet with a golden crust, served with tender steamed broccoli and creamy garlic-infused mashed cauliflower.
INGREDIENTS
4.5 oz Salmon Fillet
1 cup Broccoli florets
1.5 cups Cauliflower florets
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Lemon juice
PREPARATION
Chop the cauliflower and broccoli into small, uniform florets.
Steam the cauliflower florets in a steamer basket over boiling water until very soft, approximately 10 to 12 minutes.
During the last 5 minutes of steaming the cauliflower, add the broccoli florets to the steamer basket and cook until tender-crisp.
Remove the vegetables from the heat; set the broccoli aside and place the steamed cauliflower into a food processor.
Add the minced garlic and half of the olive oil to the food processor, blending until the cauliflower is smooth and creamy.
Season the salmon fillet with a pinch of salt and black pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4 to 5 minutes until a golden crust forms, then flip and cook for an additional 3 minutes until just opaque.
Plate the salmon alongside the garlic mashed cauliflower and steamed broccoli, finishing the dish with a fresh squeeze of lemon juice.
