In a skillet over medium heat, brown the ground beef until fully cooked, then season with sea salt, black pepper, garlic powder, and dried oregano.
In a small bowl, combine the ricotta cheese, beaten egg, and baby spinach until well incorporated.
Use a vegetable peeler to slice the zucchini into long, thin ribbons to add extra volume and nutrients.
Spread 2 tbsp of marinara sauce on the bottom of a small, oven-safe baking dish.
Place the lasagna noodle on top of the sauce, followed by half of the seasoned beef, half of the ricotta mixture, and a layer of zucchini ribbons.
Repeat the layers with the remaining beef, ricotta, and zucchini, then top with the remaining marinara sauce, mozzarella, and parmesan cheese.
Cover the dish with foil and bake for 20 minutes; remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
