Pat the salmon fillet dry with a paper towel and season both sides with sea salt, black pepper, and dried oregano.
Heat 0.5 tbsp of olive oil in a medium skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4 to 5 minutes until the skin is crispy, then flip and cook for another 3 minutes until opaque.
Remove the salmon from the pan and set it aside on a plate to rest.
In the same skillet, add the remaining 0.5 tbsp of olive oil and the minced garlic, sautéing for 30 seconds until fragrant.
Add the cauliflower rice to the skillet and sauté for 5 to 7 minutes until tender but still holding its shape.
Stir in the fresh parsley and lemon juice, then season with an extra pinch of salt if desired.
Plate the lemon-herb cauliflower rice and top with the pan-seared salmon fillet.
