Seared Salmon with Steamed Broccoli and Brown Rice
Pan-seared salmon fillet served with fluffy brown rice and tender steamed broccoli, finished with a bright squeeze of lemon and a hint of flaky sea salt.
INGREDIENTS
4.3 oz Wild Atlantic Salmon Fillet
1/2 cup Cooked Brown Rice
2 cups Broccoli Florets
2 tsp Extra Virgin Olive Oil
1 tbsp Fresh Lemon Juice
Pinch of Sea Salt and Black Pepper
PREPARATION
Prepare the brown rice according to package directions and set aside.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until the internal temperature reaches 145°F.
While the salmon cooks, steam the broccoli florets in a steamer basket over boiling water for 5-6 minutes until tender-crisp.
Toss the steamed broccoli with the remaining teaspoon of olive oil and the fresh lemon juice.
Plate the salmon alongside the brown rice and broccoli, garnishing with an extra lemon wedge if desired.
