Heat the avocado oil in a large skillet or wok over medium-high heat and sauté the minced garlic until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque, then push them to one side of the pan.
Crack the egg into the empty side of the pan, scramble it quickly until set, and then mix it in with the shrimp.
Toss in the soaked noodles, bean sprouts, and the prepared sauce, stir-frying everything together for 2 minutes until the sauce thickens and coats the noodles.
Remove from heat and garnish with sliced green onions and crushed peanuts before serving with an extra squeeze of lime.
