150g Sweet Potato
1 cup Fresh Green Beans
1.5 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Peel and cube the sweet potato, then steam or boil until completely tender.
Drain the sweet potato and mash with a pinch of sea salt until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is golden and crisp.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
