Pan-Seared Salmon with Roasted Asparagus
Pan-seared salmon fillets served with crisp-tender roasted asparagus and a bright squeeze of lemon for a vibrant and satisfying meal.
INGREDIENTS
7 oz Salmon fillet
1.5 cup Asparagus spears
0.5 tbsp Extra virgin olive oil
0.5 tsp Sea salt
0.25 tsp Black pepper
1 clove Garlic
0.5 whole Lemon
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Trim the woody ends off the asparagus and toss the spears with 0.5 tbsp of olive oil, minced garlic, and a portion of the salt and pepper.
Spread the asparagus in a single layer on the baking sheet and roast for 12-15 minutes until tender.
While the asparagus roasts, pat the salmon dry with a paper towel and season both sides with the remaining salt and pepper.
Heat the remaining 0.5 tbsp of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes per side until the skin is golden and the flesh is cooked through.
Plate the salmon alongside the roasted asparagus and finish with a fresh squeeze of lemon juice.
