While the chicken cooks, add the oat flour, Greek yogurt, and baking powder to the second bowl of whisked egg and stir until a smooth batter forms.
Pour the batter into the preheated waffle iron and cook until the waffle is crisp and easily releases from the iron.
Place the hot waffle on a plate, top with the crispy chicken breast, and finish with a drizzle of maple syrup.
