Seared Salmon Fillet with Steamed Green Beans and Sweet Potato Mash
Pan-seared wild salmon served with a silky sweet potato mash and crisp steamed green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
7.5 oz Wild Atlantic Salmon fillet
150g Sweet potato, peeled and cubed
1 cup Fresh green beans, trimmed
1 tsp Extra virgin olive oil
2 tsp Fresh lemon juice
PREPARATION
Place the cubed sweet potatoes in a pot of boiling water and cook for 10-12 minutes until fork-tender.
While potatoes cook, steam the green beans over boiling water for 5-7 minutes until they are bright green and crisp-tender.
Drain the sweet potatoes and mash them thoroughly with a splash of hot water or a tiny bit of the cooking liquid until smooth.
Pat the salmon fillet completely dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon in the pan skin-side up and sear for 4-5 minutes without moving it to create a golden crust.
Flip the fillet and cook for another 3-4 minutes until the fish is opaque and flakes easily with a fork.
Plate the salmon alongside the sweet potato mash and green beans, finishing the entire dish with a fresh squeeze of lemon juice.
