Garlic Herb Roasted Pork Loin
Tender pork loin roasted with a fragrant garlic and herb rub, served alongside charred broccoli florets for a satisfying and savory meal.
INGREDIENTS
7 oz Pork loin
2 whole Garlic cloves
1 tsp Fresh rosemary
1 tsp Fresh thyme
1 tbsp Extra virgin olive oil
0.5 tsp Sea salt
0.25 tsp Black pepper
1.5 cups Broccoli florets
PREPARATION
Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
In a small bowl, create a paste by mixing the minced garlic cloves, chopped rosemary, chopped thyme, half of the olive oil, sea salt, and black pepper.
Pat the pork loin dry with a paper towel and rub the garlic-herb paste evenly over all sides of the meat.
In a separate bowl, toss the broccoli florets with the remaining olive oil and a light pinch of salt until well coated.
Place the seasoned pork loin in the center of the prepared baking sheet and arrange the broccoli florets in a single layer around the meat.
Roast in the oven for 20 to 25 minutes, or until the internal temperature of the pork reaches 145°F (63°C) and the broccoli is tender with crisp edges.
Remove from the oven and transfer the pork to a cutting board, allowing it to rest for at least 5 to 10 minutes before slicing to lock in the juices.
