Press the almond-herb mixture firmly onto the mustard layer to form a thick, even crust.
Toss the asparagus spears with the extra virgin olive oil and a pinch of salt, then arrange them in a single layer on the other side of the baking sheet.
Bake for 12-15 minutes, depending on the thickness of the fillet, until the salmon is flaky and the crust is lightly toasted.
Remove from the oven and serve immediately with a fresh squeeze of lemon juice over the fish and the roasted asparagus.
