Seared Salmon with Garlic Green Beans and Mashed Cauliflower
Pan-seared salmon served with garlicky green beans and creamy mashed cauliflower, finished with a squeeze of lemon and a sprinkle of fresh, aromatic dill.
INGREDIENTS
7 oz Wild Atlantic Salmon
1.5 cups Cauliflower florets
1 cup Green beans
1 tbsp Nonfat Greek yogurt
1 tsp Olive oil
1 tsp Ghee
2 cloves Garlic
PREPARATION
Steam the cauliflower florets in a pot of boiling water for 10-12 minutes until they are very tender.
While the cauliflower steams, heat half of the olive oil in a skillet over medium heat and sauté the green beans with minced garlic until they are crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of salt and black pepper.
Heat the remaining olive oil in a non-stick pan over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is crispy and the fish is cooked through.
Drain the cooked cauliflower and mash it thoroughly with the Greek yogurt and ghee until the texture is smooth and creamy.
Plate the mashed cauliflower and garlic green beans alongside the seared salmon and garnish with fresh dill and a squeeze of lemon.
