6 oz Lean beef sirloin
0.75 medium Yukon gold potatoes
0.5 tbsp Extra virgin olive oil
1 cup Broccoli florets
2 cloves Garlic
0.5 tsp Dried rosemary
0.5 tsp Dried thyme
0.25 tsp Sea salt

Dice the potatoes into 1-inch cubes and mince the garlic.
Toss potatoes with half the olive oil, minced garlic, and a pinch of salt and pepper on a baking sheet.
Roast potatoes for 15 minutes.
While potatoes roast, rub the beef sirloin with the remaining olive oil, rosemary, thyme, salt, and pepper.
Move potatoes to one side of the sheet and place the beef on the other side.
Roast for another 12-15 minutes until beef reaches desired doneness and potatoes are golden brown.
Steam broccoli florets for 5 minutes until tender-crisp.
Let the beef rest for 5 minutes before slicing and serving with the garlic potatoes and broccoli.
