INGREDIENTS
5 oz Chicken breast
1.5 cups Brussels sprouts
1 clove Garlic
2 tsp Extra virgin olive oil
1 tbsp Balsamic glaze
0.25 oz Walnuts
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Trim the ends of the Brussels sprouts and slice them in half.
Toss the sprouts on the baking sheet with 1 teaspoon of olive oil, minced garlic, and half of the sea salt and black pepper.
Roast the sprouts for 20-25 minutes until the edges are charred and tender.
While the sprouts roast, season the chicken breast with the remaining sea salt and black pepper.
Heat the remaining olive oil in a skillet over medium-high heat and sear the chicken for 6-7 minutes per side until cooked through.
In the last 3 minutes of roasting, add the walnuts to the baking sheet to lightly toast them.
Slice the chicken and toss it with the roasted sprouts and walnuts, then finish with a drizzle of balsamic glaze.
