Baked Ricotta and Turkey Stuffed Shells
Jumbo pasta shells stuffed with a creamy spinach and ricotta mixture, topped with savory ground turkey and zesty marinara sauce for a bubbly, golden finish.
INGREDIENTS
2 whole Jumbo pasta shells
4 oz Ground turkey (93% lean)
0.5 cup Low-fat ricotta cheese
1 cup Fresh spinach
0.5 cup Marinara sauce
1 tbsp Grated parmesan cheese
0 tsp Olive oil
0.25 tsp Garlic powder
0.25 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 375°F (190°C).
Cook the jumbo pasta shells in a large pot of boiling water according to package instructions until al dente, then drain and set aside.
While the pasta cooks, heat olive oil in a skillet over medium heat and brown the ground turkey until fully cooked, seasoning with half of the salt, pepper, and garlic powder.
In a medium mixing bowl, stir together the low-fat ricotta cheese, chopped fresh spinach, dried oregano, and the remaining salt, pepper, and garlic powder.
Spread 2 tablespoons of the marinara sauce across the bottom of a small oven-safe baking dish to prevent sticking.
Carefully stuff each cooked shell with a generous portion of the ricotta and spinach mixture and arrange them in the baking dish.
Distribute the cooked ground turkey over the shells and pour the remaining marinara sauce evenly over the top.
Sprinkle with grated parmesan cheese and bake for 15-20 minutes until the sauce is bubbling and the cheese has melted.
