Classic Baked Ziti with Ricotta
Lean ground turkey and chickpea pasta baked in a vibrant tomato sauce, finished with dollops of creamy ricotta and bubbly mozzarella.
INGREDIENTS
1.5 oz Chickpea ziti pasta
5 oz Lean ground turkey
0.5 cup Tomato puree
2 tbsp Part-skim ricotta cheese
2 tbsp Shredded part-skim mozzarella cheese
1 tsp Extra virgin olive oil
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Dried oregano
1 tbsp Fresh basil
PREPARATION
Preheat your oven to 375°F (190°C) and lightly grease a small oven-safe baking dish.
Bring a pot of salted water to a boil and cook the chickpea ziti for 2 minutes less than the package directions suggest, then drain.
While the pasta cooks, heat the olive oil in a skillet over medium heat and sauté the minced garlic for 30 seconds until fragrant.
Add the ground turkey to the skillet, seasoning with sea salt and black pepper, and cook until browned and crumbled.
Stir in the tomato puree and dried oregano, allowing the sauce to simmer for 5 minutes to meld the flavors.
In a mixing bowl, combine the cooked pasta with the turkey sauce and half of the ricotta cheese, stirring gently.
Transfer the mixture to the prepared baking dish, then top with the remaining ricotta and the shredded mozzarella.
Bake for 15 to 20 minutes until the cheese is melted and bubbly.
Garnish with freshly chopped basil before serving.
