Classic Garlic Herb Spaghetti
Pan-seared chicken breast and al dente whole wheat spaghetti tossed in a fragrant garlic-herb oil with a bright squeeze of lemon.
INGREDIENTS
2 oz Whole wheat spaghetti
5 oz Chicken breast
1 tsp Extra virgin olive oil
2 cloves Garlic
1 tbsp Fresh parsley
1 tbsp Parmesan cheese
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Lemon juice
0.25 tsp Red pepper flakes
PREPARATION
Bring a large pot of salted water to a boil and cook the whole wheat spaghetti until al dente according to package instructions.
While the pasta cooks, season the chicken breast evenly with half of the sea salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat and sear the chicken for 5-7 minutes per side until golden and cooked through.
Remove the chicken from the pan and let it rest for 2 minutes before slicing it into thin strips.
In the same skillet, reduce the heat to low and add the minced garlic and red pepper flakes, sautéing for 1 minute until fragrant.
Reserve 2 tablespoons of the pasta water, then drain the spaghetti and add it to the skillet along with the reserved water.
Toss the pasta with the sliced chicken, fresh parsley, remaining salt, pepper, and lemon juice until well coated.
Serve immediately in a bowl topped with the grated parmesan cheese.
