Pan-Seared Salmon with Roasted Broccoli
Pan-seared salmon fillet with a crispy skin served alongside roasted broccoli and fluffy jasmine rice for a meal that is satisfyingly flaky and tender.
INGREDIENTS
5.5 oz Salmon fillet
0.25 cup Cooked jasmine rice
1.5 cup Broccoli florets
0.25 tbsp Olive oil
0 tbsp Shredded cheddar cheese
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Toss the broccoli florets with half of the olive oil, garlic powder, and a pinch of sea salt on the prepared baking sheet.
Roast the broccoli for 15-18 minutes until the edges are slightly charred and tender.
Sprinkle the shredded cheddar cheese over the broccoli during the last 2 minutes of roasting until melted.
Pat the salmon fillet dry with a paper towel and season both sides with the remaining sea salt and black pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is golden and crispy.
Carefully flip the salmon and cook for another 3-4 minutes until the fish is opaque and flakes easily with a fork.
Serve the pan-seared salmon immediately with the cheesy roasted broccoli and warmed jasmine rice.
