PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the cubed sweet potatoes with half of the avocado oil, sea salt, and a pinch of cinnamon.
Spread the potatoes on the baking sheet and roast for 15 minutes.
Add the green beans to the baking sheet, tossing them with the minced garlic and remaining oil, then roast for another 10-12 minutes until tender.
While the vegetables roast, season the salmon fillet with sea salt and pepper.
Heat a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is crisp and the flesh is opaque.
