Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Peel and cube the sweet potato into small 1/2-inch pieces to ensure even cooking.
In a medium bowl, toss the sweet potato cubes with avocado oil, sea salt, black pepper, garlic powder, and smoked paprika until well coated.
Spread the potatoes in a single layer on the prepared baking sheet and roast for 18-20 minutes until tender and caramelized on the edges.
While the potatoes roast, heat a large non-stick skillet over medium-high heat.
Add the ground turkey sausage to the skillet, breaking it into small crumbles with a spatula, and cook until browned and cooked through.
Add the diced bell pepper and red onion to the skillet with the sausage, sautéing for 5-6 minutes until the vegetables are crisp-tender.
Once the sweet potatoes are finished roasting, transfer them into the skillet and toss gently with the sausage and pepper mixture.
Garnish the dish with freshly chopped parsley and serve hot.
