Preheat your oven to 400°F (200°C). Scrub the potato, pierce it several times with a fork, and bake for 45-50 minutes until the center is tender.
While the potato is baking, cook the bacon slices in a skillet over medium heat until crispy. Remove from the pan, drain on paper towels, and crumble into small bits.
In the same skillet, drain most of the bacon fat and add the ground turkey. Cook until browned and fully cooked through, seasoning with garlic powder, onion powder, sea salt, and black pepper.
Once the potato is cool enough to handle, slice it in half lengthwise and carefully scoop out the flesh into a mixing bowl, leaving a thin shell of potato skin.
Mash the potato flesh with the Greek yogurt and half of the shredded cheddar cheese until well combined and creamy.
Fold the cooked ground turkey and half of the crumbled bacon into the mashed potato mixture.
Spoon the mixture back into the potato skins, heaping it slightly.
Top with the remaining cheddar cheese and bacon bits, then return to the oven for 5-10 minutes until the cheese is melted and bubbly.
Garnish with freshly sliced green onions and serve warm.
