Seared Salmon Fillet with Steamed Green Beans and Sweet Potato Mash
Pan-seared salmon fillet served over a fluffy sweet potato mash with steamed green beans and a squeeze of zesty lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
150g Sweet Potato
150g Green Beans
1 tsp Extra Virgin Olive Oil
1 wedge Lemon
PREPARATION
Peel and dice the sweet potato into uniform cubes and boil in a pot of water until fork-tender, about 10-12 minutes.
While the potato boils, place a steamer basket over another pot of simmering water and steam the green beans until they are bright green and crisp-tender, roughly 5-7 minutes.
Pat the salmon fillet completely dry with a paper towel and season lightly with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness is reached.
Drain the sweet potatoes and mash them thoroughly with a fork or masher until smooth and fluffy.
Plate the sweet potato mash alongside the steamed green beans and top with the seared salmon fillet.
Finish the dish with a fresh squeeze of lemon juice over the salmon and vegetables.
