Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served over creamy garlic-mashed cauliflower and crisp-tender green beans, finished with a squeeze of bright lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon
2 cups Cauliflower Florets
1.5 cups Green Beans
2 tsp Avocado Oil
2 cloves Garlic
PREPARATION
Steam the cauliflower florets and garlic cloves for 10-12 minutes until very tender.
While cauliflower steams, trim the green beans and steam them in a separate basket for 5-6 minutes until crisp-tender.
Transfer the steamed cauliflower and garlic to a food processor or use a hand blender; add 1 teaspoon of avocado oil and a pinch of salt, then blend until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat the remaining 1 teaspoon of avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the green beans on the side.
