Seared Chicken Breast with Creamy Cauliflower Mash and Steamed Broccoli
Pan-seared chicken breast served over a velvety cauliflower purée with a side of steamed broccoli, finished with a touch of rich grass-fed butter.
INGREDIENTS
4 oz Chicken Breast
2 cups Cauliflower florets
1.5 cups Broccoli florets
2 tbsp Grass-fed Butter
1 tsp Avocado Oil
1 clove Garlic
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While the cauliflower steams, season the chicken breast with sea salt and black pepper.
Heat the avocado oil in a medium skillet over medium-high heat and sear the chicken for 6-7 minutes per side until the internal temperature reaches 165°F.
During the last 5 minutes of chicken cooking, steam the broccoli florets until they are bright green and tender-crisp.
Transfer the steamed cauliflower to a blender or food processor with one tablespoon of grass-fed butter, the garlic clove, and a pinch of salt, then blend until completely smooth.
Serve the seared chicken over the cauliflower mash with the broccoli on the side, topping the vegetables with the remaining tablespoon of grass-fed butter.
