INGREDIENTS
4 oz Salmon fillet
1 cup Asparagus spears
1 tbsp Olive oil
1 tbsp Fresh parsley
1 tsp Fresh dill
1 clove Garlic
1 tbsp Lemon juice
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Trim the woody ends off the asparagus spears and place them on one side of the prepared baking sheet.
Drizzle 0.5 tbsp of olive oil over the asparagus and toss with half of the sea salt and black pepper.
In a small mixing bowl, combine the remaining 0.5 tbsp of olive oil, lemon juice, minced garlic, chopped parsley, and chopped dill.
Place the salmon fillet on the other side of the baking sheet and season with the remaining salt and pepper.
Spoon the herb and garlic mixture over the top of the salmon, pressing it down gently to form an even crust.
Roast for 12 to 15 minutes, depending on the thickness of the fillet, until the salmon flakes easily with a fork and the asparagus is tender and slightly charred.
