6.5 ounces Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
1.5 teaspoons Ghee
2 cloves Garlic
1 tablespoon Lemon Juice
PREPARATION
Chop the cauliflower into small florets and mince the garlic.
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
In the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until they are bright green and crisp-tender.
While vegetables steam, pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat half of the ghee in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
Remove the steamed cauliflower and place in a bowl with the minced garlic and the remaining ghee.
Mash the cauliflower using a fork or immersion blender until smooth and creamy.
Plate the salmon alongside the garlic mashed cauliflower and steamed green beans.
Drizzle the entire dish with fresh lemon juice before serving.
