6 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
1 tsp Olive oil
1 tbsp Non-fat Greek yogurt
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, about 10-12 minutes.
Transfer the steamed cauliflower to a food processor or blender along with the Greek yogurt and a pinch of salt, then process until completely smooth and creamy.
Heat half of the olive oil in a non-stick skillet over medium heat and sauté the green beans and minced garlic for 5-7 minutes until tender-crisp and fragrant.
Season the salmon fillet with salt and pepper. In a separate pan, heat the remaining olive oil over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 3-4 minutes until the fish is cooked to your preference.
Spread the cauliflower mash onto a plate, top with the seared salmon, and serve the garlicky green beans on the side.
