Chicken and Green Bean Rice Bowl
Sautéed chicken breast and crisp-tender green beans are tossed in a savory ginger-garlic sauce and served over fluffy jasmine rice for a vibrant and nourishing meal.
INGREDIENTS
5 oz Chicken breast
0.5 cup Cooked jasmine rice
1.5 cups Green beans
1 tbsp Extra virgin olive oil
1 tbsp Coconut aminos
1 tsp Fresh ginger
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Sesame seeds
PREPARATION
Dice the chicken breast into bite-sized pieces and season evenly with sea salt and black pepper.
Trim the ends of the green beans and finely mince the garlic and fresh ginger.
Heat the olive oil in a large skillet or wok over medium-high heat.
Add the chicken to the skillet and cook until golden brown and cooked through, approximately 5 to 7 minutes.
Remove the chicken from the pan and set aside; add the green beans to the same pan with a tablespoon of water.
Cover the pan and steam the beans for 3 minutes until they are bright green and crisp-tender.
Return the chicken to the pan and stir in the minced garlic, ginger, and coconut aminos.
Sauté everything together for 1 to 2 minutes until the sauce is fragrant and coats the ingredients.
Spoon the chicken and green bean mixture over the warm jasmine rice in a bowl.
Garnish with sesame seeds before serving.
