Preheat your grill or grill pan to medium-high heat.
In a small bowl, combine the extra virgin olive oil, dried rosemary, dried thyme, minced garlic, sea salt, and black pepper to create a herb paste.
Rub the herb paste evenly over both sides of the lamb loin chops, pressing the seasoning into the meat.
Trim the woody ends off the asparagus and lightly mist with a tiny bit of oil and a pinch of salt.
Place the lamb chops on the hot grill and cook for 4 to 5 minutes per side for a perfect medium-rare finish.
Add the asparagus to the grill during the last 4 minutes of cooking, turning occasionally until tender and lightly charred.
Remove the lamb from the grill and let it rest for 3 minutes to lock in the juices.
Serve the chops with the grilled asparagus, a fresh squeeze of lemon juice, and a dollop of plain Greek yogurt on the side.
