Preheat your oven to 375°F.
Heat the extra virgin olive oil in a medium oven-safe skillet over medium heat.
Add the ground turkey to the skillet and cook until browned, breaking it apart with a spatula as it cooks.
Stir in the diced yellow onion and red bell pepper, sautéing for 5 minutes until the vegetables are softened and fragrant.
Add the minced garlic, smoked paprika, sea salt, and black pepper, stirring for 1 minute to toast the spices.
Add the baby spinach to the pan and stir until the leaves are just wilted.
Use a spoon to create two small wells in the turkey and vegetable mixture.
Carefully crack one egg into each well.
Transfer the skillet to the preheated oven and bake for 8 to 10 minutes, or until the egg whites are fully set but the yolks are still soft.
Remove from the oven, sprinkle with crumbled feta cheese, and serve immediately with a dollop of Greek yogurt on top.
