Herb-Stuffed Portobello Mushrooms
Oven-roasted portobello caps overflowing with a savory herb-flecked turkey and spinach filling, topped with a sprinkle of salty feta that melts into every crevice.
INGREDIENTS
2 large caps Portobello mushroom caps
8 oz Ground turkey
1 cup Fresh spinach
1 tbsp Fresh parsley
1 tsp Olive oil
0.25 cup Feta cheese
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Dried oregano
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper for easy cleanup.
Gently wipe the portobello mushroom caps with a damp paper towel to remove any dirt, then remove the stems and use a spoon to carefully scrape out the dark gills.
Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey and cook until browned, breaking it up with a spatula as it cooks.
Add the minced garlic, dried oregano, sea salt, and black pepper to the skillet, stirring for 1 minute until fragrant.
Toss in the fresh spinach and cook until just wilted, then stir in the fresh parsley and remove the skillet from the heat.
Place the mushroom caps on the prepared baking sheet, gill-side up, and divide the turkey mixture evenly between the two caps.
Sprinkle the crumbled feta cheese over the top of each stuffed mushroom cap.
Bake for 15 to 20 minutes until the mushrooms are tender and the feta is slightly golden.
