Preheat your oven to 400°F (200°C).
On a large rimmed baking sheet, toss the broccoli florets, sliced carrots, and sliced zucchini with half of the olive oil, half of the minced garlic, and a pinch of sea salt and black pepper.
Spread the vegetables in a single layer and roast for 20-25 minutes until they are tender-crisp and slightly caramelized at the edges.
While the vegetables roast, season the chicken breast evenly on both sides with dried oregano, dried thyme, and the remaining sea salt and black pepper.
Heat the remaining olive oil in a large skillet over medium-high heat.
Place the chicken in the skillet and sear for 6-7 minutes per side, or until the exterior is golden brown and the internal temperature reaches 165°F.
During the last minute of cooking the chicken, add the remaining minced garlic to the skillet to infuse the oil and chicken without burning.
Remove the chicken from the heat and let it rest for 3 minutes before slicing.
Plate the herb chicken alongside the roasted vegetable medley and garnish with freshly chopped parsley.
