Crispy Tofu and Chicken Stir Fry with Broccoli
Lean chicken and arrowroot-dusted tofu wok-seared with fresh broccoli florets in a savory ginger-garlic sauce, finished with toasted sesame seeds.
INGREDIENTS
8 oz Chicken Breast, cubed
3 oz Extra Firm Tofu, pressed and cubed
1.5 cups Broccoli florets
2 tbsp Coconut Aminos
1 tsp Arrowroot Powder
0.5 tsp Sesame Oil
1 clove Garlic, minced
1 tsp Fresh Ginger, grated
PREPARATION
Press the tofu between paper towels for 10 minutes to remove excess moisture, then cut into small cubes.
Toss the tofu cubes in arrowroot powder until lightly coated.
Heat a non-stick skillet or wok over medium-high heat and lightly coat with a tiny amount of oil spray or a drop of the sesame oil.
Add the tofu to the pan and sear until all sides are golden brown and crispy, then remove and set aside.
In the same pan, add the cubed chicken breast and cook until browned and cooked through, approximately 5-7 minutes.
Add the broccoli florets, minced garlic, and grated ginger to the pan with the chicken, tossing frequently for 3 minutes until broccoli is bright green and tender-crisp.
Return the crispy tofu to the pan.
Pour the coconut aminos and remaining sesame oil over the mixture, tossing everything together for 1 minute until the sauce thickens slightly and coats the ingredients.
Serve immediately while the tofu remains toasted and the chicken is hot.
