Loaded Baked Potatoes with Chives
Oven-roasted Russet potato stuffed with tender shredded chicken and steamed broccoli, topped with a dollop of creamy Greek yogurt and fresh, zesty chives.
INGREDIENTS
1 medium Russet potato
4 oz Chicken breast
1 tsp Olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
0.5 cup Broccoli florets
0.25 cup Non-fat Greek yogurt
1 tbsp Fresh chives
PREPARATION
Preheat your oven to 400°F (200°C). Scrub the Russet potato thoroughly and pierce it several times with a fork.
Rub the potato skin with olive oil and a pinch of sea salt. Place it directly on the oven rack and bake for 45 to 60 minutes until the skin is crisp and the center is soft.
While the potato bakes, season the chicken breast with garlic powder, salt, and pepper. Poach or pan-sear the chicken until it reaches an internal temperature of 165°F, then shred it finely with two forks.
Steam the broccoli florets for 3 to 5 minutes until they are bright green and tender-crisp.
Once the potato is finished, slice it down the center and fluff the interior with a fork.
Stuff the potato with the shredded chicken and steamed broccoli. Top with a generous dollop of Greek yogurt and garnish with freshly minced chives.
